Dark honey and hazelnuts with medium body and acidity
Prodecoop is a large cooperative union of some 2300 farmers in the EstelĂ, Madriz and Nueva Segovia areas of northern Nicaragua. The farms here are planted with the Bourbon and Caturra varietals and they are processed using the washed method The cherry is sorted and graded and then taken for depulping, during which the skin and mucilage (fruity pulp) are removed leaving the parchment-covered bean. The depuplers on these farms are small in comparison to the equipment some of the larger farms have. The beans are then soaked in water in small fermentation tanks where the remnants of mucilage are fermented off the parchment. The parchment-covered beans are then washed with fresh water and taken to small, raised screens for drying. After the beans reach the desired moisture content the coffee is sent to the Prodecoop dry-mill where the parchment is removed and the green coffee is graded and bagged ready for export.

We selected this lot of Tres Pueblos specifically for decaffeination as we felt this coffee has the flavour and body to hold up well in the process. The coffee is decaffeinated after harvesting by Descamex using the Mountain Water Process. Please see descamex.com.mx for more information about the decaffeination process.
