Santa Inês is part of the Sertão Group and in addition to its 75 hectares of coffee it has 140 hectares of native forest and grazing for their Girolando cattle. Francisco Isidro Dias Pereira has five cultivars of coffee planted on the farm: Yellow Bourbon, Red Bourbon, Yellow Catuaí, Acaiá and Mundo Novo. We chose the Yellow Bourbon for its sweetness and caramel flavours. This shipment has been processed using the Pulped Natural Process, during which the skin and fruit of the cherry are removed, and the sticky parchment-covered beans are left to dry naturally. The final stage is the removal of the dried parchment before the coffee is graded, bagged and shipped to the UK. Recently, the drying equipment has been upgraded and improvements made to the patios. Drying patios in this area of Brasil are typically laid with concrete and they take a bit of a battering over the harvest and rainy seasons. Like potholes in our roads there are only so many patches that can be made before a full resurface is needed. Grind Guide

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.

For use in your home grinder!
