We are delighted to have coffee from Finca El Pedregal on our counter this Spring. Neftali Fajardo is one of the first farmers we have bought from with the help of the Specialty division of the National Federation of Coffee Growers (FNC). Neftali has an interesting take on the traditional-washed-process method, where he puts the cherry in a holding tank to start a fermentation before pulping and the later fermentation in mucilage. We find this gives the coffee a juicy tropical fruit profile. Neftali has two hectares (making this a small farm by Colombian standards) planted with Yellow Bourbon. It’s exciting to find Yellow Bourbon planted in Colombia as it has mostly been replaced over the years with varietals thought to be more adaptable to the local conditions. Neftali proves the exception to the rule and has produced a wonderful coffee this year.

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
