Finca Las Gravilias has been a component of our Organic Espresso for several years. The name Las Gravilias comes from two trees that are located at the entrance of the farm and when they are in bloom the flowers fall and cover the road like a purple-white carpet. The farm is more than 100 years old and, in the year 2000, Fabrizzio and his father made the decision to move to organic farming. Fabrizzio’s uncle, who has a neighbouring farm, was already producing organic coffee and was achieving better prices. The farm also looked healthier and happier and this led Fabrizzio and his father to the conclusion that in the long term this was a much better way of farming. The 11.9 hectares of the farm are all planted with Caturra and Catuaí. Some of the Caturra trees that are still in production today are 80 years old and there is no plan to renew them, as Fabrizzo puts it ‘these trees just need to be well looked after and they will produce forever’.

Grind Guide

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.

Whole beans

For use in your home grinder!

If you use a different method such as a syphon or Chemex, require a custom grind or need some advice, please get in touch and we will be happy to help.
