Finca Las Cortinas was bought in 1991 by Iris Gonzalez’s father, Jose Mario Gonzalo Monterrosso. Iris and her mother took over the farm in 1993 after Jose Mario died, and now Iris now runs the farm and processing with her husband. Iris originally sold coffee cherry to local buyers and cooperatives. This is coffee growing at its simplest form and after working the farm for some years, Iris realised she would gain more from the crop by processing the coffee herself. The farm is in an area with high altitude and plenty of sun; two good factors in processing coffee which demands a consistent weather pattern during the crop season. With no straightforward access to fresh water, the methods available were the natural process and pulped natural process. Iris also saw the increasing popularity of these methods in areas more associated with traditional washed process and started experimenting. Iris is now more inclined towards honey processed (a riff off pulped natural) lots, as she has more control of the drying which helps with the final quality of the coffees. We’re excited to have this lot from Las Cortinas on the counter.
