René and Nicolasa Mamani are originally from Escoma, a municipality in La Paz. As a teenager, René visited on many occasions his older brothers in Uchumachi, Caranavi. In 2007 René saw his sister-in-law, Juana Mamani, succeed in the Cup of Excellence competition; it was then that he got enthusiastic about coffee. In 2009, René and Nicolasa moved to Uchumachi, bought a 14-hectare farm, and began to learn about coffee agriculture from their extended family. They have been members of Agricafe’s (agricafe.com.bo) Sol de la Mañana program since its beginning a few years ago. The program provides agricultural and market assistance to farmers in the Caranavi region, providing agronomy training to help increase the quantity and quality of coffee from the area. René does the field activities and Nicolasa focuses on post-harvest processing. They’re currently planning a new nursery bed of Caturra for a one-hectare plot.

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
