Profile
We visited Finca Navarro for the first time this year in August and met with the Navarro family. Julia Navarro runs the farm with her siblings Victor and Carmen. The Navarro family are originally from Potosi and before settling down in Taypiplaya, lived in Santa Cruz for eight years. They first heard about the Taypiplaya area from relatives who mentioned that the region had potential for agriculture. They decided to move there, give it a shot and arrived in December 2006. They planted coca, coffee, and also tried to grow other vegetables. Victor worked in transport for some years before going full time with coffee. It has taken them ten years of persevering to develop the right farming skills and understand the coffee plant cycle well. ‘It was hard in the early years, coffee is not an easy subject, and in agriculture mistakes have repercussions. Patience and dedication are key’, says Victor.

Grind Guide
Cafetière
A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.
Aeropress slow
Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.
Filter
This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.
Stovetop
This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.
Aeropress fast
This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.
Domestic espresso
A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
