Robson Vilela bought Alta Vista in 2001 after retiring from his dentistry practice. Robson had his practice for 25 years and it was always his ambition to retire to a farm and grow coffee. He planted two varieties; Yellow Catuaí and Yellow Bourbon which are both prized for their clarity and sweetness. The coffee trees are protected from the sun and occasional strong winds by banana trees. The crop from these provides an additional income to the farm and each year the farm produces around 44 metric tons of bananas. In his drive to continually raise the quality of his coffee, Robson has carried on making improvements to the dry mill and patios such as the creation of raised drying beds. Along with these improvements, Robson has expanded his fish lakes and now the farm has three that provide him and his workers with fresh fish. This year Robson planted 4,200 native trees in a section of the farm as the beginning of a permanent preservation area.

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
