Luiz Paulo Dias Pereira Senior must have one of the industry’s most interesting collection of notebooks. He has been farming coffee, amongst other crops, since the 1970s when he joined his father, Isidro Pereira (IP), on the family farm. The notebooks contain observations and notes stretching back more than thirty years when Luiz Paulo Snr began keeping rain records. In the early 2020s he added daily temperature readings as well. The rain records tell an interesting story of what used to be a predictable and repeatable two season (dry and wet), and the move towards the current micro-climate experienced on the farm of excess rain and increasing temperatures. The notebooks also contain details of every single lot of coffee produced on the farm, from growing information to final cup quality. Collated together they tell a decades old story of growing coffee on Fazenda IP.

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
