Finca Las Palmeras is a family owned and operated farm in the Buesaco region of Nariño. Sisters Diana Burbano Moncayo and Magali Burbano Moncayo, along with their siblings, and parents Franco Javier Burbano and Imelda Moncayo, all contribute to the running of the farm. The local climate has become unpredictable over the last few years and like other farmers in the area, the family are having to invest in making some changes to the processing area of the farm. Of biggest concern is the potential for rain during the harvest and drying time. Processed coffee cherry is spread out on patios to dry, and this can take a few days. If it rains during this time, the coffee doesn’t dry properly which can lead to problems in the flavour profile as well as coffee which holds too much moisture to sell. To mitigate this, the family have covered some areas of the patio with roofs to store coffee while it rains, with the idea that it is spread back out on the patios when it is dry. This does help limit the exposure to rain but as only a small volume can be protected the family will need to continue. The patio can’t be completely covered as this would stop the coffee drying in the sun. It is a delicate balance of space and requirements.
