Oscar Chacón Cubillo is one of the youngest coffee farmers from whom we buy. Oscar found La Esperanza up for sale in a semi-abandoned state, and with the help of his parents (Oscar and Francisca Chacón of Finca Las Lajas), and a strong plan, bought the farm a few years ago and began its renovation. The renovation included planting new varietals more suited to the humid conditions caused by the farm’s altitude and shade cover afforded by the Poas Volcano. Originally Oscar chose Catigua, Hibrido 1, San Isidro, and T5246: all varietals that can tolerate high humidity and have some resistance to Roya. Out of the four, Catigua has held up the best and this will be planted when more areas of the farm require replanting. Alongside the coffee the farm has citrus, avocado, guava, bananas and other local fruits. The farm also has a spring which they protect with a surrounding area of forest of around one hectare. Outside of the farm Oscar continues his university studies in information technology.

Grind Guide
Cafetière
A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.
Aeropress slow
Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.
Filter
This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.
Stovetop
This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.
Aeropress fast
This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.
Domestic espresso
A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
