Fabrizzio Marín Jiménez inherited Finca Las Gravilias from his father, Roberto Marín. Roberto was a founding member of the Asociación de Familia Orgánicas de los Cerros Caraigres (Association of Organic Families of the Caraigres Hills – AFAORCA). AFAORCA was set up in 1996 with the idea that local farmers of organic crops could join the organisation to help each other by sharing knowledge and resources. As a larger group, they would be able to access services and financing that would be inaccessible to them as individual farmers. The group is open to organic farmers of coffee, citrus, sugarcane and its derivatives, amongst other crops. Today, the association has 18 active members who can access the beneficio, dry-mill, exportation services, and roasting facilities.

Grind Guide

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
