This is the second year we have had coffee from Finca Las Nubes back on the counter after a long hiatus and we’re delighted to have it available again. Fabio Solís Sanabria and Sonia Villeda de Solís raised their family at the farm and grew coffee together for more than forty years. Sadly, Sonia died this year after a difficult illness and Fabio now continues the farm on his own. He has reduced the area of production and is farming fourteen hectares - this is an easier size to manage for the next few years. Fabio continues to rely on his decades worth of experience in growing and processing coffee. He judges the completeness of fermentation (after the coffee has had its skin pulped and is in tanks soaking until the mucilage is removed) using a well-worn stick which is put into the tanks, if the stick leaves a gap when removed then the coffee is ready for washing, if not then it needs more time. This method could be considered rudimentary, but Fabio has so many years of quality production behind him that he can gauge fermentation as well as any pH meter! Alongside growing coffee, Fabio roasts his coffee and sells it locally. His coffee roaster is installed in the courtyard of his home in Esquipulas.

Grind Guide

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.

For use in your home grinder!
