Santa Catalina is a beautiful farm in Antigua owned by the Echeverría brothers. Together they own five farms, four of which adjoin each other with Santa Catalina in the middle. Many of the trees on the farm were planted in the 1990s and are beginning to reach the end of their best years of production. The major project for the farm over the next few years will be to replace those trees. This is an excellent opportunity for a revaluation of the cultivars planted and the planting pattern. Pedro Echeverría, along with the farm manager Alfredo Gómez, has decided to replant with Catuaí, Caturra, and Pache. These cultivars are proven in the area and on the farm and have a great flavour profile. The building of the well and irrigation system a couple of years ago has meant that the team have greater confidence in areas of the farm which have historically been a little dryer. The decisions on the management of the farms are made together between Pedro and Alfredo. Alfredo has been working with the brothers for 18 years and has in-depth knowledge of Santa Catalina and vast experience gained from the day-to-day workings of the farms.

Cafetière

A coarse grind also suitable for cold brew. We use the word cafetière, but this can also be referred to as a French press, plunger or press pot.

Aeropress slow

Suitable for making a long, filter style coffee, often brewed for a few minutes. Similar to our paper filter setting.

Filter

This is suitable for our paper filters and ceramic or plastic cones, along with other brands such as V60, Clever dripper and Melitta.

Stovetop

This is an espresso style grind suitable for use in hob top espresso pots such as a Bialetti or Grunwerg. Sometimes referred to as a moka pot.

Aeropress fast

This is also an espresso style grind ideal for brewing a short, concentrated, espresso style coffee in an Aeropress.

Domestic espresso

A fine grind for using in your home espresso machine. Grind requirements will vary depending on brand and model, but this setting aims to work for the majority of home setups.
