We have been working with Doña Carmen from Montes de Cristo for over a decade now. Montes de Cristo is a small farm of almost three hectares and every inch of the farm is put to work. Alongside coffee, Doña Carmen grows succulents, orchids and stone fruit, and raises chickens and ducks for the local markets. Recently, Doña Carmen has been having her coffee roasted and packed up for local sale as well. Montes de Cristo is one of those farms that really sticks in the heart. Doña Carmen worked so hard to keep the farm going through some tough times and as she is now getting a bit closer to her pension, her brother (Roy) and her three daughters (María José, María Noelia, Julia María) are helping with the heavier tasks. All of the processing is done using one pulper that works from a generator as the farm has no electricity. From pulping the coffee is dried on raised meshed beds. Doña Carmen refers to the raised beds as parihuelas (stretchers) due the similarity in shape. She has 70 of these parihuelas and they enable easy moving of the 23kg of pergamino (parchment-covered coffee) that is spread out on each one while it is drying. We’re pleased to be able to continue to support Montes de Cristo, it is a beautiful farm and Doña Carmen is working incredibly hard to keep it going.
