About

Profile

Our decaffeinated coffees generally change a couple of times throughout the year, but they are always well-balanced in flavour and suitable in all brew methods.

For a few years now we have been decaffeinating coffees from farms in Brazil and Guatemala that we have been buying from for a long time. When the new crop is ready, we taste and choose a lot that we think would stand up to the decaffeination process and retain its aroma profile and depth of flavour. We have been selecting coffees this way for some years now, working with Fazenda IP (Brazil) and Finca La Bolsa (Guatemala). After each coffee is selected, it is sent directly to Descamex in Mexico where the decaffeination process takes place. Descamex use the Mountain Water Process, whereby the coffee is steam-bathed to allow the release of caffeine without the use of chemicals. Our current decaf is Decaf Finca La Bolsa from Guatemala.
